For a proper functioning of your heart you need "good cholesterol (also known as "HDL") and lecithin. The cholesterol quantity is adjusted by the lecithin, but the lecithin itself can become noxious if it accumulates.

The lecithin enzymes are destroyed when you boil water, but, in the same time, its capacity of keeping the cholesterol level under control is lost. In conclusion, there's only one middle situation: eating healthy and without excesses.
The cholesterol level rises when you frequently consume cookies or fats. The surplus deposits on the arteries walls, forming plaques and causing hypertension. More than that, the excessive deposits of cholesterol on arteries causes the blood vessels tear, forming the so called milkleg.
